Growing up, my mom would spend hours making quince paste in the traditional way, with lots of stirring and the occasional splatter risk and burns. But thanks to the Thermomix , that old-school effort is a thing of the past. Now, we can enjoy a silky, glossy quince paste perfect for a cheese platter or as a unique jam on toast.
INGREDIENTS
- 600 g Quinces, peeled, cored and cut into quarters.
- 300 g sugar
- 1/2 lemon peeled, pips removed.
- 1 apple core washed, optional
METHOD
- Place quinces, sugar and lemon into mixing bowl and chop 10 sec / speed 7.5. Add the apple core; this addition will contribute additional pectin to assist in setting up your quince.
- Cook for 15 min / 100C / speed 5. The quince should move on the surface at all times; don't decrease the speed.
- After this time, you will achieve a soft, spreadable quince. For a more firmly set quince, continue cooking for an additional period, 10 min/ 100C/ speed 5.
- Pour it into a tray or container, allowing the tray to cool before covering and storing it in the fridge. Once set, the paste can be cut into pieces, and it will stay fresh for months in the refrigerator.
NOTES
It's a great accompaniment to cheese, or can be melted down and used in fruit tarts and pies. It should be cut into small wedges or squares to serve.
