Mini Lime Loaf Cakes: A Burst of Refreshing Flavour

  

Indulge in the delightful combination of zesty lime and moist, tender cake with these Mini Lime Loaf Cakes. Perfectly sized for a dainty treat, these mini delights are sure to brighten up any occasion. Whether you're celebrating Mother's Day or simply craving a burst of citrusy goodness, these miniature cakes are bound to impress.


Ingredients: 


Cakes:

  •  2 medium eggs
  •  125g sugar
  •  Skin of 2 limes
  •  130g plain flour
  •  1 tsp baking powder
  •  65g butter, melted
  •  65g Greek or thick yogurt

Syrup:

  •  Juice of 1 lime
  •  45g sugar
  •  1 tbsp water
  •  Icing:
  •  1 tbsp Greek yogurt
  •   175g icing sugar
  •   Juice of 1 lime


Instructions:


1. Preheat the oven to 160°C.

2. In a mixing bowl, combine the sugar and lime skin. Blend for 10 sec/speed 10.

3. Add the eggs and whisk using the butterfly attachment for 3 min/speed 3.5.

4. Add the flour, melted butter, yogurt, and baking powder. Mix for 5 sec/speed 5. Use a spatula to continue mixing if necessary.

5. Divide the batter between the mini loaf tins, you can also use a muffin tray, and bake for 20 minutes.

6. While the cakes are baking, prepare the syrup. In a small saucepan, combine the lime juice, sugar, and water. Bring to a boil and simmer for a few minutes.

7. Once the cakes are baked, generously brush each one with the syrup.

8. Allow the cakes to cool in the tins for about 5 minutes, then transfer them to a wire rack to cool completely.

9. To make the icing, sift the icing sugar into a bowl. Add the lime juice and Greek yogurt, and stir until smooth.

10. Spread the icing on top of the cooled cakes and decorate with lime zest and rose petals (optional).

11. Enjoy!
