Banana & Coconut Cream Chia Pudding Vegan Breakfast.

This  cream chia pudding is loaded with banana and coconut flavour for a delicious breakfast, snack or treat!

This easy and healthy recipe is raw, vegan, gluten-free, dairy-free, soy-free, no-cook, paleo-friendly and contains no refined sugar.

And don't worry about being precise with the amounts you put in or exact ingredients...…use as much as you like or as little of each or add your own favourite toppings, nuts.....


INGREDIENTS per serving

  • 2 Tbsp chia seeds
  • 1/2 cup almond milk or any other dairy-free milk
  • Plant based Coconut yogurt
  • 1 Tbsp maple syrup or honey
  • 1 banana
  • Coconut Flakes


METHOD

  1. Combine the chia seeds, almond milk and maple syrup together in a glass or bowl. Whisk until well combined.
  2. Cover it and place in the fridge for 1-2 hours to firm up or overnight.
  3. Top the set chia pudding with Coconut yogurt. Add sliced Bananas and Coconut Flakes.
  4. Add whatever toppings you like, raspberries, chopped nuts, chocolate flakes....


NOTES

Use the right ratio of chia seeds-milk, 2 Tbsp of chia seeds-1/2 cup of milk.

mix the Chia seeds with the milk, let it sit for 2-3 minutes, then mix it again to avoid having any of the chia clump together.  You can store the chia-milk pudding in airtight container in the fridge for up to 5 days.
